Ages 16–19 · 2 weeks · Lucerne, Switzerland
Your mornings
Workshop time, in the kitchen. Not a lecture about cooking — cooking.
-
Knife skills & mise en place
The habits professional kitchens run on — grip, cuts, station discipline.
-
Chef-led kitchen sessions
You cook, in real BHMS training kitchens, with expert chefs beside you.
-
International flavours
Techniques and ingredients from cuisines around the world, hands on.
-
Plating & presentation
Make a dish look the way it tastes. Composition, colour, restraint.
-
Chocolate & pastry
Precision work on the sweet side of the kitchen — including Swiss chocolate.
-
Cooking as a team
A kitchen is a team sport. You plan, cook and plate as a brigade.
Your afternoons are shared
Mornings split by track. At lunch, both tracks merge — and Switzerland becomes the classroom.
Mount Pilatus. Cruises on Lake Lucerne. City challenges in the old town, the Swiss Transport Museum, day trips across central Switzerland. Every camper does every excursion, whichever track they chose.
Who this track fits
The home cook who outgrew the home kitchen
You already cook for family and friends. Now you want real technique, real equipment and a chef who pushes you.
The future chef or restaurateur
You are seriously considering culinary school. Two weeks here is the honest way to test that plan before you commit.
The curious all-rounder
Food is your way in, but you are still deciding. You cook in the mornings — and see hospitality up close every afternoon.
